easy chicken roll ups and super bowl cupcakes

I have to be honest when it comes to the super bowl for me it's all about the food, the commercials and half time.  My hubby is not the biggest sports fan so some years the game will actually go largely unwatched except for a sneak peak or two as we switch channels.


This year I'm heading over to a friends to eat view the game and plan on taking an appetizer and
dessert to share.  I'm use to this combo for gatherings so I have plenty of recipes pinned on my appetizer pinterest board but I knew this time I wanted to take something that transported easily, was in individual servings and didn't require heating.

It didn't take long to settle on my spicy chicken roll ups and box mix cupcakes.  Both are easy to make, they're best made in advance and they are delicious, which is really what matters most, right?

My recipe for roll ups is very loose so feel free to use what ever sounds good to you or is in the fridge because they are very accommodating to change.  Here's the recipe...

Spicy Chicken Tortilla Roll Ups

Ingredients


1 cooked chicken breast, cooked any way you like and chopped or shredded in small pieces
1/4 cup finely chopped onions (I used red but green onions are great as well)
1/2 Tablespoon Taco Seasoning Mix
1 cup of Mexican blend shredded cheese (again feel free to substitute but I used a combination of medium cheddar and Monterrey jack)
1 can Rotel original drained well
1 8 oz. block of cream cheese softened
optional - diced cilantro
8 flour tortillas

In a medium bowl toss cooked chicken, onions and taco seasoning.  Add the rest of the ingredients and mix until combined.

Drop approximately 1/4 cup of mixture on the center of a flour tortilla and spread evenly.  Begin rolling up as tightly as possible.  Repeat with the remaining tortillas.



Wrap in plastic wrap and place in the refrigerator for at least four hours or overnight.  Remove plastic wrap and cut off both ends of the roll ups (for sampling, wink, wink) to even out the tortilla.

When your ready to serve, use a sharp knife to cut them into 1/2 inch slices and arrange on a serving plate.  If you're transporting them I just wrap the sliced roll ups in plastic and keep in the refrigerator until we head out.

I haven't given all of these a try (they just sound delicious) so let me know what you think if you give one a go.

For the cupcakes...

I just follewed the recipe on the back of the box and separated about 1/4 cup to add bluish green food coloring to and 1/4 cup to add orange food coloring to.

Fill the cupcake liners about 3/4 full and then add a spoon of either colored mix to center of cupcake pushing the spoon to the bottom of the liner.  Repeat for all 12 cupcakes.  Bake as recommended on the box.



Divide premade frosting in half in glass dishes.  Coloring each half as above.  Place the two frostings in separate plastic baggies, pushing it down to one corner.  Snip off the baggie corner.  Swirl the frosting on the cupcakes starting at outside and working in.


I made these team flags to add to each cupcake and arranged them on a Dollar Store football serving dish.


Nothing fancy but still fun and festive.  Don't you think?

  2. Hi Patty, Looks yummy . . . Now that the Sea Hawks are out of the running, my hubby has lost most of his Super Bowl zest. I know he'll still be watching. Me, I am not a big fan of football,, but I like the commercials, too. What other time of the year, do you say that, right?

I'm only interested in the Superbowl if the Chicago Bears are playing. ;-) Otherwise, I usually sit on the couch with my laptop just to be "with" hubby and I watch the commercials and halftime show. And yes, it's a good excuse that day to eat some fun appetizers and snacks. However, this year hubby is working, so no Superbowl or snacks for either of us. Though the no snacks thing is probably a good thing for me, especially since I have my annual physical a few days after the Superbowl. ;-)

  4. Both the roll ups and cupcakes sound good! We usually go to a party on Super Bowl, but this year, I think we will stay home. I love to watch the game and the ads, and the half time show. And of course, eat during the whole thing! Fun fun!!
