chicken...again?

My mom and I went to see The Hundred Foot Journey last week and I was taken by how beautiful they made simple fresh food look on the screen.  I was truly inspired to go home and cook when we left the theater.  The thought of dicing and slicing and prepping food made me want to pull out my cookbooks and actually plan a menu.


We are trying to eat more chicken and less red meat but chicken night after night can get a little boring.  (I can picture the rolled eyes of my family when I say we're having chicken...again.)  So I am always on the look out for good, basic chicken recipes to add to my week night arsenal.


I do a lot of my recipe searches online through Pinterest, Google and The Food Network but sometimes I just need to open the pages of a real book and let the pretty pictures get my creative juices flowing.  Don't you agree?


Then it dawned on me that you guys are another great source of inspiration and menu ideas so I am putting it out there.  What is your favorite chicken recipe?  And if you can, share the link whether it's to your blog or the online source.  I'm sure we could all use a little dinner inspiration.

  2. Chicken avocado quesadillas is a fave around here. Especially if I get free avos from someone. Who can afford beef anymore right?

  3. One good thing about chicken is that it's so versatile. It helps when I consider international flavors, Mexican, Japanese, Italian, and Chinese. We hardly eat beef, so I rely on fish, chicken and ground turkey for protein.
    Sometimes though it does get tiresome, so I understand where you are coming from.

  5. We eat mostly vegetarian and when we do eat chicken, I buy the organic, free-range boneless chicken breasts. I know they're quite pricey, but there's only two of us and since we rarely eat it, we can afford it. Anyhoo...my physical therapist recently told me about this recipe for Greek Chicken Pitas...she said her family loves it, especially her 7-year old. And it's quick and easy to make. I've made it one time and we loved it, too. Will be making it again soon. Marinate boneless chicken breasts in a mixture of extra-virgin olive oil, fresh lemon juice, a little garlic, and oregano for at least 2 hours. Cook them however you wish - grill, bake, saute. Cut into strips. Stuff whole wheat pitas with greens of your choice and veggies of your choice: sliced tomatoes, cucumbers, kalamata olives, green peppers, artichoke hearts and the chicken strips. Sprinkle with feta cheese. Then drizzle with a homemade balsamic-fresh lemon juice dressing - or even just plain balsamic vinegar. Or not. Very versatile "recipe"! Hope you enjoy.

  9. Oh man, I know what you mean about chicken. I love it most any way, or the same old ways... but my family is not always as... flexible.   11. Yeah, I'm with everyone who gets tired of the same ol' chickie dishes. I'm always trying new ones, too. I like to put chicken breasts in the crock pot and pour on a jar of Herdez Green Chili Salsa. Then, dinner's ready at the end of the day. Put it inside torillas with a little bit of sour cream and rice. Delish. Susan (P.S. Herdez is the best brand of any kind of salsa and is very authentic---Mexican---tasting.) Susan
