chili and homemade biscuits

I made my first batch of chili of the season over the weekend.


I found a recipe for Texas Beef Skillet years ago and except for a few tweaks here and there I have been making the same recipe for years.  Unfortunately, by the time I served the chili for dinner the light was gone for the day.  Not to worry, I set a side a bowl of leftovers in the fridge to photograph in the daylight.  The only problem is when I got home from work and went to grab my chili, it was gone.

Every. bit. of. it.


So my chili and biscuit post turned into just a biscuit post.  I guess that means the chili was good, right?


Being the carb lover that I am, I am always on the lookout for a new biscuit recipe.  This one is from Jen over at The Cottage Nest and it is definitely a keeper.  They are just as light and fluffy as she claimed.  The recipe was simple and could easily be altered to add any flavor you wanted, it's definitely a keeper.

Nothing spells comfort food like homemade chili and biscuits and these are especially yummy.

What's your favorite comfort food?  I bet it has plenty of carbs in it!

  2. Sometime in the future there's going to be a post about pumpkin gingerbread cupcakes on my blog. By the time I thought of taking a photo, I had to grab an unfrosted leftover Halloween party cupcake from the fridge, and poured hours old cold coffee into a cup and doctored it with half and half. So the photo is enticing, but in reality it's a very cold cupcake and an equally cold cup of coffee. It did taste good after a reaheat in the microwave.

  5. Yes. I'd say if the chili is gone... it had to be great!
    I'll have to try those biscuits.
    My favorite comfort food is .. cookies; and yes, they have plenty of carbs in them :)

  9. Now that looks good...but it is called Texas Chili...so this Native Texan would think so...and the results show it is by everyone eating it.

    Comfort food...all food comforts me, that is why I need to go on a diet.

  13. Sounds like that chili is a winner! Next time you are saving something for your blog, it might be good to hide it in the back of the fridge. That's what I do.

    My comfort food is chicken and dumplings. My Grandmother makes the best, which we used to have every Thanksgiving and Christmas. Of course being an old Southern cook, she never uses recipes, so when I asked her what she did, she just looked at me blankly and said she didn't know. I make my own version using herbs, which my family now says are almost as good as hers. Comfort food isn't quite the same when you have to make ti though!

    Maybe that someone who ate that last bowl of chili should make you some to enjoy the next time!
